Method
- Remove the green leaves from the tops of all the Strawberries and blend until smooth. Set aside in the fridge.
- Put the milk in a pan with the cinnamon stick and bring to the boil.
- In a bowl, whisk together the yolks, sugar and ground cinnamon.
- Discard the cinnamon stick, then strain the hot milk over the yolks, whisking continuously.
- Pour the ice-cream mix back into a pan and cook on a low-ish heat for 8-10 minutes, stirring constantly until thickened.
- Whisk the ice-cream mix into the cream, then cool to room temperature then chill in the fridge.
- After the ice-cream mix is chilled remove from fridge and pour this into your ice-cream maker along with the Strawberry Purée and Cocoa Powder
- Freeze in an ice-cream maker.
- Chop the White Chocolate and Milk Chocolate into pieces
- Once the Ice-Cream is frozen scoop out your desired amount into a bowl and spinkle the chocolate pieces on top
