Strawberry Chocolate Ice-Cream

Ingredients
225ml of Full Fat Milk
3 Large Egg Yolks
100 grams of Caster Sugar
1 tsp of Vanilla Extract
450 millilitres of Whipping/Double Cream
350 grams of Strawberries
80 grams of White Chocolate
80 grams of Milk Chocolate
1 Cinnamon Stick
1 tsp of Ground Cinnamon (fresher the better)
3 tbp of Cocoa Powder

Method

  1. Remove the green leaves from the tops of all the Strawberries and blend until smooth. Set aside in the fridge.
  2. Put the milk in a pan with the cinnamon stick and bring to the boil.
  3. In a bowl, whisk together the yolks, sugar and ground cinnamon.
  4. Discard the cinnamon stick, then strain the hot milk over the yolks, whisking continuously.
  5. Pour the ice-cream mix back into a pan and cook on a low-ish heat for 8-10 minutes, stirring constantly until thickened.
  6. Whisk the ice-cream mix into the cream, then cool to room temperature then chill in the fridge.
  7. After the ice-cream mix is chilled remove from fridge and pour this into your ice-cream maker along with the Strawberry Purée and Cocoa Powder
  8. Freeze in an ice-cream maker.
  9. Chop the White Chocolate and Milk Chocolate into pieces
  10. Once the Ice-Cream is frozen scoop out your desired amount into a bowl and spinkle the chocolate pieces on top
